Grandmum’s Famous Coconut Rice !

Forenote : Serve your curry or sides with this amazing spiced coconut rice and you will be a hero! our family loves this and gather at occasions mainly to enjoy this coconut rice which my grandmas’ cooks only on a special family day once a year.

Ingredients:

1/2 a medium onion sliced

2 Cups long Basmati Rice

4 Cups Coconut milk

3 Green chillies

1/2 Tsp Shahi Jeera (Black Cumin) 

6 Cloves

2 Star Anise

2 Small Bay Leaves or 1 Big

Small Stick Cinnamon

1/2 Tsp Salt or to taste

2 TBsp Ghee or Purified unsalted cooking butter

1 Whole Mace

3 Whole Cardamom

Cook in Pressure cooker or a rice cooker

Method:

Heat the cooker vessel, saute the onions, add all the whole spices and saute for another 2 mins. Add the rice and fry again for a min. Add the coconut milk, salt . Taste the coconut milk to check the salt. mix and pressure cook for 3 whistles or 20 mins or in the rice cooker.

Serve with any curry or yogurt Raita.
