Louki ke kofte (V)

Fore note: I remember those days when my brother and I wouldn’t eat a lot of vegetables, especially bottlegaurd aka louki. But, we just loved this kofta curry my mum used to make and didn’t realize it was lauki kofta’s for ages. They just melt in your mouth and are great with roti or naan. I will actually go a step further and say they are a healthier version of the famous calorie loaded malai Kofta’s.

Bottle gourd -1 medium sized

1 Cup Gram Flour

1 pinch Bicorbonate of sodium

½ Cup Onion paste

½ Cup Tomato puree

1Tbsp. Cashew paste

1 Tsp. Garam masala

1 ½ Tsp. Red Chilli Powder

2 Tbsp. Unsalted Butter

½ Tsp. Green Chilli paste

1 Pinch Turmeric powder

1 Tsp. Coriander powder

1 Tbsp. Ginger Garlic Paste

Salt to taste

Oil for frying the koftas


Grate the bottle gourd and squeeze the water and keep aside.

Heat oil in a pan, add onion paste and fry till the oil separetes. Now add the tomato paste and fry till the raw smell is gone. Add turmeric powder, half of ginger garlic paste, cashew paste, coriander powder, red chilli powder, half of garam masala powder, add salt to taste and let it simmer in low flame.

For the koftas:

Add Gram flour to the grated louki, Green chilli paste, garam masala powder, half of ginger garlic paste, salt, soda and knead well and make into equal balls and deep fry in oil.

Add the koftas to the gravy and simmer for about 5 mins or till the koftas absorb the gravy. Garnish with fresh green coriander and serve with hot roti’s or parata’s
